Baba Ganoush

It's time to do something with the last of the eggplants.  As well as making some Rum Balls today I plan on making Baba Ganoush.  Not very Christmasy I know but I'll still enjoy it.

I found this recipe on the Gourmet Worrier blog http://www.gourmetworrier.com/2009/08/one-of-those-happy-kitchen-accidents.htmland thought it sounded a little different so I'm going to give it a go.  Will post a pic of the finished product.

We picked around 16 eggplants off 4 plants.  We planted another just a couple of weeks ago.  I'm not sure if it's too late in the season but I guess we'll find out.

  1. I'm glad someone likes eggplant. It's one thing that will grow GREAT for us but none of us likes it. LOL I'm determined to make the next garden produce a lot that we can can for later.

  2. You are too clever Jen! I think Becky is right though, not too many people I know like eggplant, hope you can make something beautiful out of them!

  3. Oh I feel sorry for the poor eggplant it seems to have a bad reputation. I love it and my favourite way to do eggplant is crumbed and fried. Not the healthiest but definitely the best.
